Right now there are 8 varieties.
Zombie
Zombies are a hostile mob found deep underground.
They follow Jack around and can jump up blocks, this makes them dangerous adversaries.

Meat Launching Zombie
Meat throwing zombies are mobs found deep underground in v1.0.5+
When they don't throw meat they look almost identical to Zombies except their skin and their shirt is a slightly different color.
Do NOT try to eat the meat they throw at you, it hurts. These types of zombies along with the Mushroom Zombie are very dangerous without the proper weapons, so don't attack them when they have a good spot and you have bad weapons! It is also know under the name of Meat Throwing Zombie.

Headless Zombie
The Headless Zombie is a hostile mob found underground. Rumors say he's angry because he can't find his head. It seems like he jumps higher than the others zombies. It was added in the v1.1 update.

Mushroom Zombie
A hostile mob that spawns in the O-Underground Mushroom Biome, and shoots purple mushroom pieces at you.
They are almost like the Meat Launching Zombie.

Mayan Zombie
The Maya Zombie is a rare mob introduced in v1.0.5
They only spawn deep in the world near mayan blocks. It is also know under the name of Mayan Guardian.

Zombie Jazon
Jazon is a new mob introduced in 1.2.2.
Jazon is a dangerous foe and has the dash jumping abiltity, he is a long and short range mob, making him even more harmful. It is also known under these different names: Zombie Jazomb or simply Jazomb.
If you want you can be the Jazon mob by buying the O-Jazon Hat.

Zombie Head
The zombie head is a hostile mob introduced in v1.1
It's body is still wandering around somewhere.
Be careful, though he is weak, he jumps an incredible amount, hitting you often, while making it hard for you to hit him.
Looks like the headless zombie's head!
