Durability is how many times a tool/weapon can be used before it breaks, meaning carrying back up or extra tools is advised in the event your current one breaks.tools & weapons made out of stronger materials (Ex: copper < iron) will last longer before they break. The amount of uses a tool has before it breaks is symbolized by an anvil. Weapons generally last longer then tools of their corresponding tier.Despite being classified as weapons, fishing poles have unlimited durability. Bows also have unlimited durability. Durability for tools is taken into account after you break a block, so you can make your rare/powerful tools last longer by nearly breaking a block with them and then switching to a lesser tool to take the damage. Weapons, however, take damage on every strike against a mob, and thus have higher durability to compensate. Durability can be restored to 110% of a tool/weapon by encrusting said item with cut topaz.
